Shops that sell based on price have to cut corners somewhere, especially since steel prices are up so dramatically in the past couple of years.
Few shops have the equipment to do bends that don't severely reduce the interior diameter of the pipe, and the crush-bends that they're typically capable of doing will severely restrict the flow capacity of the pipe if you try to get a tight-radius bend. The pipe may start off as a 2.5 or 3in pipe but by the time they've bent it to go around the fuel tank and over the axle you've got a 1 7/8in passage inside the pipe.
This is where a manufactured exhaust system with mandrel bends or at least decently smooth press-bends can be preferable to a bent-on-site system. Otherwise you can purchase basic mandrel-bent pipe sections from various places and weld them together to form the shapes needed.
