I agree with Yaofeng. You'll know in about 4000 miles. The grinding sound will be subtle at first where you'll be wondering "am I imagining that?" It will get louder so gradually that by the time it is really loud, it wont be so obvious to you.
Sorry to add to the paranoia but I've found that it really takes about 4000 miles to know if a new bearing is damaged by incorrect torque.
You might be lucky. If not, at least you'll be able to replace them quickly again. I can do a 9000 bearing in 15 minutes now because I've incorrectly torqued my last replacement set on account of slightly denting the side of the nut with a hammer when initially breaking the axle loose. If you did this too, you'll never get the right torque unless you fix the thread (easiest to grind off 1/8" from the side of the nut).
