I have the same car with some old Group 6 chips, and I noticed the same thing. If I drive with full boost for any length of time, the temperature gauge moves to the 10 o'clock range. As long as the temperature does not go into the red zone, the car is working normally. I do have an 82 degree thermostat and fan switch as a precaution. Also, this is a 16 year old car, so check the radiator for cold spots that can indicate blocked flow.
I guess that when you generate more horsepower, you generate more heat.
