The last time I did a 9k headliner (a few years back on an '88 9kT), materials ran less than $75, total. I did not do the sunroof panel, btw, as it was in reasonable shape, and I didn't really want to dive into it. The whole project (pull, clean, and reinstall fabric on the headliner and C-pillar, then reinstall all of it) ran about 5 hours.
On the other hand, there's the timeless question, "what's your time worth?" How much more to have him do the R&R of the headliner itself from the car? It'd be worth the extra cash to have them pull the sunroof to get at the sunroof panel while they're in there, and when you pick the car up, it's all done. On the other hand, it's not a horrible project, and if you have the time, it might be worthwhile.
