I'd recommend every six months. The oil will absorb water from the air. And when you do drive the car, it's good to drive it for at least 20-30 minutes before a long rest to boil off moisture in the oil. So if you get those couple of hundred miles 5 miles at a time, get at least a few good long drives in there.
I'd also put gas stabilizer in the fuel - you don't want gas sitting there for more than three months untreated, and it sounds like you could be going a year or more on the same tank. Gas breaks down and will clog.
My recommendation would be to make a point of driving the car regularly, if only for a few days at a time. Cars are to be driven.
