Engine temp as indicated by a OBD II reader showed a 82 C thermostat cracking open at about 170*F (well down on the temp gauge). In town traffic, with the heater on, and below freezing weather it could take quite a while before the temp reached 180*F. Running on the highway for a half hour or so in cold weather, the engine temp runs about 180* or less. At on time I had installed 3 different brand 82*C thermostats in an effort to get one that would keep the temp up. All 3 appeared to crack at about 170*F which kept the indicated engine temp low.
If a 82*C thermostat cracks at ~170*F, a 89*C thermostat should crack at about 180 - 185*F which would allow the engine temp to run as John stated.
Could it be the 175*F engine oil cooler thermostat is limiting the engine temp after the engine is thoughly warmed up? It is a fairly large oil cooler and does a good job of cooling the oil. It doesn't take much coolant flow, either water or oil, to keep the engine "on the thermostat" in < 50*F weather.
