Unless this some kind of moral stand against vast Torx hegemony, I would leave the bolts as they are. You are not going to be able to use standard bolts with a hex head for most of the fittings because the current fittings are recessed and there is no clearance for larger hex head on the bolt, technically called a hex head cap screw. That leaves you with the choice of a Phillips head screw or a Allen head screw, also called a socket head cap screw. Phillips heads are notorious for rounding out when you try to put any torque on them and they don't stick on the end of a screwdriver unless it is magnetized. The Torx screw was developed specifically to address these two deficiencies. (An earlier attempt at this was the Posi-Drive screw that had steeper flutes and extra rib on each recess.) Socket head cap screws don't have as much of problem with this, but they do tend to be bulky, unless you can find a pan head screw that fits an Allen wrench.
But, to answer your question, I believe that most of the fasteners are 5mm with a 0.8mm pitch, but they could be 6mm with a 1.0mm pitch. The easiest thing to do is to take one out and take it down to the hardware store to match it up with on in the bin.
