On again, off again with my own t-stats .... I used a stock 89 in all four of our 9000's, until a massive coolant system flush/hose overhaul four years ago. Went with 82.
As soon as winter hit [I live in SE Wisconsin], I regretted it. So a year later, I went back to 89. The temp gauge comes off the peg sooner, and the temp needle 'clock position' is about 1/8 inch higher [right about 8:30 when it's pretty cold out, closer to 8:00 in the spring and fall].
Ditto Ari's comments on the OE Waxstat. $20 seems like a lot, but it's worth it to do it right.
And PLEASE replace the gasket at the same time. Anti-seize on the housing bolts will help the next time you open it up. While you're in there, look carefully at the hoses that snake around the throttle body and go towards the heater core, as well as the parts which follow the PCV hose back down toward the intake. There is a short bit of coolant hose, maybe 2 inches long, that can harden/swell/crack/drip etc at the metal pipe [this is below the right front corner of the valve cover/head, to the right of the exhaust manifold].
