1.1mm isn't necessarily too high but it can get that way very fast as it's the top end of the range. You will get many opinions here but for a standard, notn-tuned turbo car I'd personally go with .9mm. You might like to experiment with what suits your particular car. A bit of white might be within the "normal" range as cars run leaner than they used to, but I know where you're coming from.
You could look at the NGK site which, last time I looked anyway, had pictures of different plug conditions. You might also like to replace the odd-looking plug with a new one to see if that affects the results.
Have no experience of this, but could an under-performing injector cause this effect?
As to whether the gap caused the problem, how did they look after you re-gapped then?
Apologies if you are the world's greatest expert and know all this - there must be a dozen different "Johns" who post here! If you feel like coming out of the shadows, you'll be very welcome
