SAABs use a special 3-part thermostat, not sure what they sold you at NAPA but it might not be compatibile with your engine. See the thread about thermostats above.
Glad that you have not overheated the engine. You wrote that the "light is staying on and coolant is at the max line" - what light are you referring to, the low coolant light? You can easily dismiss this warning if the coolant is indeed up to the max line on the expansion tank, the light is probably triggered by lack of insulation on the sensor under the expansion tank.
