The pressure sensor for the oil warning light has several failure modes, and practically any older car that I have owned has had this part fail.
1. Usually they leak, sometimes catastrophically as they are in the oil distribution circuit immediately after the oil pump, therefore under the highest possible oil pressure. This will still illuminate the warning light when the oil level gets low (no oil pressure!).
2. They stop functioning, which is bad if you are depending on the light to warn you if something goes amiss. This is detectable when you start up your car if you actually check the operation of the warning lights - most people don't, or don't notice that the oil can (hidden in the pictogram on my 1994 car) isn't lighting up any more (I missed this for an unknown amount of time).
3. First #2, then #1 - could be what happened here.
The good news is that replacing the part is incredibly cheap, less than $5 for the generic part. The bad news is that your car sounds like it needs some major work as a result of the failure.
