Do you think that "professionals" care about your life as much as you do? I have had plenty non-satisfactory work done by people that I have paid to repair my car. Remember that mechanics typically are getting paid a flat rate by the job, so they have some motivation to finish it quickly.
Tie Rod Ends (TREs) are pretty straightforward, the hardest part is removing the old ones if they have rusted in place, and then perhaps resetting the toe-in on the replacements. If you get the ball joint end torqued to spec (does your professional even use a torque wrench?) and the jam nut put on tightly (you must have 21 and 22mm fixed wrenches), there is little that can go wrong. In the event that something loosens up, you will notice the loose steering long before the TRE falls off the car. The only thing that I would possibly send out is the toe-in setting (alignment) if you do not feel that you can do it yourself.
