Depending on what year you have there's a diagram on the car itself. Usually on the drivers side under the hood? On the hood? Cant remember exactly where but its there. If the CEL came on right after you started it, you probably forgot to plug something in. Perhaps the NTC on the intake manifold? I would look for something electrical at first.
As far as your coolant dropping after filling the engine for the first time is normal. Usually best to fill it while its running. Coolant drop is from thermostat opening and letting coolant in the engine. It takes a while for the radiator fan to come on from just idling. Take it for a spin once figure out what may have not gotten plugged back in and vacuum lines checked. If you find something (or not) disconnect the battery for 10 mins or so to reset the CEL.
