You probably could run the 0W40 but the older car might not be happy and may leak more. Could wind up burning a little, too.
I switched my '96 9K CSE over to 10W40 Mobil 1 at about 91K miles, right when I bought it. Have also used 5W50 Castrol Syntech. Both were fine, no difference that I noticed. I change it about every 5K, but have gone over 7500 a few times. Car uses no oil now at 193K, except for a couple minor drips.
Also have a '03 9-5 Linear with 108K miles on the clock. It was on Mobil 1 0W40 until about 90K miles, then I went to Mobil 1 10W40 High Mileage, and now use the same oil in both cars, and in both my daughters' cars, a '96 9K CS and a '99 9-3SE. FWIW, the 9-5 has used a quart every 4K miles since we got it at 40K miles, regardless of the oil used.
The 0 weight is more for fuel economy reasons that anything else, and unless you have to start in temps below about 10 degrees F on a regular basis the 10 weight oil is fine. And IMHO, a 30-weight oil is not enough in any turbo Saab engine.
