Normally you would not lose much oil just evacuating the system. However if compressor failure is catastrophic you replace the condenser and drier, and flush the rest of the system out to get rid of debris. Then you'd be starting from scratch with no oil and add the full required amount. (You'll probably find the warranty on the new compressor has requirements to that effect.)
If the old oil was not flushed out I would probably dump out and measure the oil in the old compressor and put that amount back in the new one. You should also be replacing the drier, add another ounce of oil for that.
You should follow the recommendations that came with the new compressor, though, that would take priority over any guesswork. If the replacement is an aftermarket unit it may have different requirements than OEM, which specifies PAG-46 for Sanden, PAG-100 for Seiko-Seiki compressor. (Total for the entire system is 6 ounces as I recall.)
