The Griffen was a special options package - it came only in the CD, and were only automatics. They came with every available option, a wood-grain dash, and the Griffen name. They also came with a price tag that required you to put the back seat down to carry it. No performance upgrades, just every luxo bit that Saab had on the shelf.
I believe that the Griffen refers to the mythical beast with the body of a lion and the head of an eagle (and people complain about gene-modified wheat!). The head of a griffen is shown on some versions of the Saab logo.
