Your car has I believe 4 lines - two from the transmission to the oil cooler thermostat, and two from the thermostat to the oil cooler itself. The thermostat is a metal cylinder bolted to the frame just behind the radiator. Follow the oil cooler lines and you'll see it.
Earlier cars had a thermostat in the lines which proved to be more trouble than it was worth - leaking, noise - Saab eliminated the thermostat in later years (it was gone by '92). You can buy a 'oil cooler line retrofit kit' which is just two lines one from the tranny to the oil cooler, and a return line. Runs about a couple of hundred dollars from the dealer - try some on-line places for a better price. This IS a do-it-yourself job. Remove the battery and battery shelf, and the plastic cover under the radiator behind the air dam. Then remove every transmission line you see. Put a pan under the car to catch the drippings. You can remove the thermostat if you want, or just leave it bolted to the frame. The new lines go right in. All you need are a socket that will fit on the nuts for the banjo bolts, and a lot of rags. Just keep all the surfaces clean of grit and grime. Took me about 90 minutes, doing it for the first time and taking it slow. A reputable shop shouldn't charge more than two hours. This is pretty straightforward, with no tricks, and pretty accessable.
The other option is to have a speed shop fabricate you a set of hoses. Find some place that has done it before. It will probably be cheaper, but the Saab hoses do fit quite nice. There are some metal bends. The retrofit kit comes with instructions that are actually useful.
Under no circumstances would I replace all four hoses and leave the thermostat in in the system. The thermostats leak, and a new thermostat is more expensive than buying the retrofit hose set.
