is that the operating temperature happens to be right at the border of two temperature bands. My bet is that if you have either a colder spell or warmer spell in your area, the temperature gauge would become stable again. So if you happen to run a tad warmer it switches to the higher band but when it cools down a bit, the gauge drops down to the lower band. You could see this up and down depending on your driving and ambient temperature. Were you in stop and go traffic when this happens ?
Check your coolant density, add some more antifreeze or more water and see if this stablizes the reading. Doing this would change the "normal" operating temperature a few degrees.
Another possibility is to check your ambient air temp, is the sensor/connector loose, wires dangling ? I think the coolant temperature reading for post '95 9K is a function of the both the ambient and actual coolant temperature.
