Nothing like doing a job twice. I had the same problem.
After you put the rubber o-ring around the thermostat so that the groove in the ring fits the edge of the thermostat (and making sure that the little cut out with the thing in the middle faces up)....
There is a very thin gasket you can buy which has the shape of the thermostat housing/cover. I bought a Stant gasket which is a brand available in most parts stores. This goes between the two halves of the thermostat housing and is held in place by some adhesive and the bolts holding down the thermostat cover. The one I bought really only fit well around one bolt, so I cut the bolt hole on the other end. When it gets hot it melts and forms a seal. I also used some blue silicone. First I put a thin bead of silicone around the thermostat housing, then I applied the thin gasket, then put the cover on and bolted it in. Don't over torque it or you will prevent the silicon and thin gasket from making a proper seal.
