Sounds like you have at least two problems. One, the fan thermoswitch, it should be turning the fan on when the gauge reads no higher than 3/4 (mine is more like 5/8 on the gauge - 82C thermoswitch). Also, it sounds like your thermostat could be stuck closed. How soon after you start the car does the temperature go into the red? If the thermostat was stuck closed, it should be within maybe five to ten minutes, given your temperatures. Not good!
When the water pump was going out on my car, the temperature ran hotter than it should (at that point I had the 89C thermostat and fan switch). It got maybe a needle's width or two below the red, but never into it. And that only because I was heading up a steep mountain pass at near triple digit speeds, with an ambient outside temp of just over 100F. Oh plus at the time, my car was an automatic, which runs hotter than manual due to the oil cooler for the tranny..
If your water pump is going out though, normally you'll either see water/steam seepage, and likely notice low coolant level - the 'check coolant level' will come on in the EDU.
