It has nothing to do with your plumbing. Some dealers take advantage of everyone they can - equal opportunity pillaging. Most everyone has a story of a shop pulling something, although you have a pretty nasty one here. I'm a guy, and know a couple of things about Saabs, and my local Saab dealer has tried to nail me a few times.
It sucks not to trust people, but when it comes to money, never trust. I don't know what the laws are in your state, but for the kind of money we're talking about, it's worth a fight. Call a few other shops and get some estimates. Find out the list price of the parts. If you don't have an itemized bill from the Bags Of Grease That Walk Like Men, make sure you get one. There are books shops have that show the standard number of hours to do everything - that's how they estimate - just multiply it by the shop's rate and add parts. A good mechanic can usually beat those times by a little. If it runs over, then the shop usually eats it. So you can get the labor time from most any Saab shop. Multiply it by the hourly rate they must post by law, and compare to the bill. If they charge over list price for the parts, you can hit them there.
Again, it varies from state to state, but some states have a department of consumer protection, and in other states shops are responsible to the DMV. That information should be posted prominently in the shop. Once you get your story together, call the owner. If this place was a dealership, even better. They're not in the business of pissing people off. If you can show the charges were beyond reasonable, you can probably negotiate something.
And as much as I hate to say it, sometimes it helps to have someone along that has different plumbing than you. Some folks out there just plain don't take women seriously. (Like I need to tell you this).
