89 SAAB 9000 Engine Temperature Sensor Problem

I live in Sicily Italy and have an 89 Saab 9000. I have been having significant problems keeping the engine running smoothly and with good fuel economy for the last six months. First I had a fuel injection problem and my Italian mechanic rebuilt the injectors and the car ran perfectly for about a month. Then it started running intermittenly rough, gas economy dropped way down and the fuel ecomomy computer when from averaging 28-30 mpg to 14-15. I took it back in and he said it was bad engine temperature sensor. It worked well again for about a month and the same thing happened. New Mechanic said it was due to the fact that the previous mechanic put the wrong temperature sensor in. Now a month later it is doing the same thing. In the morning when I leave for work and the outside temperature is cool and the engine is cool, it ususally runs very smoothly but as soon as it gets hot outside, the engine starts to run rough again, it sucks fuel, and black smoke comes out the tail pipe when you suddenly accelerate probably indicating too rich a fuel mixture.
Can anyone out there give me an idea what else my be causing this or causing temperature sensors to go out? Where is the engine temperature sensor anyway as I do not have a manual for this car?
