I use stock pads. In the past I've used Metalmasters and other performance pads, but was unsatisfied. They worked great on my racing cars, but not so well on the street - I didn't like the warmup they required.
If you check the rotors on my cars, you'll see some ridges and grooves. They aren't the lovely flat and smooth of a new rotor. But they are well above minimum thickness. The new pads very quickly 'bed in' to the ridges and grooves of the rotor, and I don't see any issue with stopping capability. In fact, you could argue that my rotors have slightly more surface area than a perfectly flat rotor.
I take my braking performance very seriously, but I don't notice any performance improvement with a set of ground rotors versus a set that's been around for a while. I'll grind a set of rotors if they become warped, or if I've really gouged them up, say by running a set of pads down to the rivets. But I haven't let any pads go that far in about 20 years, and I haven't had any warpage problems on my Saabs - I think proper torquing of the wheel nuts plays a big part.
