Nothing Resolved with Shop(warped head)

Don't know where to start:
The shop is telling me it 10 hrs of labour plus $125 in parts plus $500 of labour from the machine shop...
I had them stop all the work.. They are halfway into the job.. (only 3 hours of labour incurred...)
I asked them resurface the head and replace gaskets only, -0- guarantees on the work... they refused...
At anyrate, I think this place took me for a ride, because I drove the car in there, I'm pretty sure I blew the gasket, but probably did not warp the head...
So, they won't return the car to me unless I cough up $360.00 to cover their costs, and I get back in parts...Hmmm..
I'm not sure what I'll do, normally, I don't run into this kind of thing; this is the first time ever. And I usually take a shop's word at face value, but this place has jerked me around..
Looks like I will be moving the car out of their shop and bringing to some place that is more willing to explain the charges, in the mean time, I will have to eat the charges...
