Metal, especially aluminum, will corrode to some extent. I suspect that the problem with present heater cores is corrosion in the metal, not necessarily at a metal/plastic interface (could be wrong here). From what I understand, Bars Leaks both seals very small leaks and helps prevent corrosion. However, if you are using high-quality anti-freeze and replacing it every two years or so to maintain it's corrosion-fighting properties, you should be fine. Both the aluminum in the heater core and in the head can corrode. The heater core corrosion may be more obvious, but corrosion in the head will be more expensive in the long run, so anything you can do to minimize it (frequent coolant changes) helps.
