What you do is begin the shift as normal, except instead of shifting to third, you shift to neutral first, and let the clutch pedal up. 'Blip' the throttle, which means get the engine RPMs up to where you expect them to be once you go into third (or whichever gear you are planning to go into) at the current road speed. It's better to err on the high side than the low side, but of course effort and smoothness will be best the close you are. Now, before the RPMs have the chance to fall, put the clutch pedal back in and shift into third.
It sounds more complicated than it really is, and after you have practiced it for a few days or a week, it's pretty easy. The key is doing everything quick (depending on how well your throttle is adjusted and whether or not your decel dashpot works!). After many years, it's second nature to me and doesn't slow me down at all, but it does make downshifting a heck of a lot smoother and more fun!
