When you say the AC fan motor, are you talking about the blower motor that blows air through the vents (also works for the heater), or the radiator mounted fan (usually on the FRONT of the radiator)?

If it is the Blower (cabin) fan, you don't want to remove it to test. Removal is a major pain. You can, however, remove the grill over the fan and access the connector pretty easily. Carefully jumper battery power to the fan to see if it will run. If the fan wasn't running, I would do that simple task well before I pulled the fan.

What, exactly, is the fan doing (or not doing?)

If you burned 2 quarts in 600 miles, you would definately see it in the exhaust. It wouldn't be like a destroyer laying down smoke, but there'd be a significant haze behind you. Therefore, I have to assume it's a leak. Now, there are plenty of leaks that don't leave a puddle in your driveway. Say the engine is cold, and you have a minor leak, but the leak is above the oil level in the pan - it only comes out when the engine is running. You start up and drive off. The oil is leaking, but only on the highway where you don't see it. As the car warms up, parts expand, and the leak seals. You park the car, and with the engine shut off, the oil drains back into the pan, below the level of the leak. The car cools off and the leak opens, but none leaks out because the level is below the leak.

Try this - Put a piece of cardboard or newspaper under the car when it's cold, and start it up and let it idle. Wait until the temperature gauge gets up to normal operating temp, and let it idle a little more (probably 10-15 minutes, total). Then check the cardboard or newspaper for oil.

I'm not familiar with the V6, but there could be many places for an oil leak that's temperature related. The oil pan could use tightening. It could be a main seal that just like to leak at certain temperatures. I've seen oil pressure switches and oil temperature senders that leak oil only as the car warms up.

But I'll bet you're leaking it, just out on the highway.
