Spark plug threads will be very close to the same temperature as the head, which, would be a few degrees at most above the coolant temp - about 220F, about 105C. Anti-sieze won't even break a sweat there. The exhaust is the one that gets hot.
Here's a way to look at it - Something glowing cherry red hot (actually giving off light) is running about 800C, or 1472F. Something glowing orange is at about 950C, or 1740F. Good old Dark red hot is only 600C or just over 1100F.
Under normal operation, nothing in the exhaust system is giving off visible light, so temperatures are below 450C or 840F.
If you really wail on the turbo, you can get it to glow red (non-water jacketed) - so I'd say that's in the 1400F range. Of course, there is the famous turbo picture in the book "two stroke to turbo" of an engine on a test stand where the turbo is glowing red hot.
The Oxygen sensor threads are in the downpipe tube, and unless you see that tube glowing red, regular anti-sieze isn't going to have any trouble. The exhaust manifold bolts go into the engine block, and the engine block doesn't run much above coolant temp, or at least not a thousand degrees more.
If you've made performance mods to your engine, and/or regularly stomp it AND keep after it, regular anti-sieze should be fine. Most street driving involves transient temperature swings, and the thermal mass of pipes and such will keep the peak temperature down. But if you are racing, where the constant high load can bring average temperatures up, then higher temp anti-sieze would be advised. But unless you can get the threads to an orangy-yellow glow, regular should do just fine.
