Depends on the weather. If it's humid out, there will be a lot of water squeezed out of the air by the air conditioning. And it doesn't have to be hot to be humid - a damp, cool day pushes a lot of moist air through the system. Yes, hot air can hold more water than cool air, but wet is still wet.
It's common to get some fog at startup, especially if the car had been run earlier. If the car is cold, moisture has condensed throughout the vent system. If you just ran the car recently, and the A/C was cycling to keep the air dry (as it does in an ACC-equipped car), the AC coils are cold when you shut the car down, and will accumulate a lot of moisture. All that water doesn't sheet off the coils - it sits on them as little droplets. Start the car and blow air over the coils, and that water ends up on your windshield.
If you get some condensation when you first start the car, and the A/C takes care of it in 20 seconds or so, you're fine. That's normal. It's when you get condensation on the inside when the car is warm that you've got to worry.
