The exhaust gases are hottest and therefore occupy the greatest volume at the front of the system. So a wider downpipe should have a greater effect on flow than a wider system farther back.
The JT 3 inch downpipe (from speedparts.se) fits beautifully, is part stainless and part aluminized steel. It is pre-drilled for one O2 sensor. The distal end of it has no flange. After that, I would recommend a 3 inch free-flow cat, such as Carsound, then going down to 2.5" after the cat should not affect flow, as the exhaust has cooled enough by then that it doesn't occupy as much volume. You could skip the middle muffler and have a free-flow muffler in back such as Dynomax. It would be louder but not obnoxious, especially if you include the cat.
I would guess your mechanic had you agree to "off-road use only" is because you are omitting the cat. Especially if you are keeping the OEM downpipe, the omission of the cat will get you nowhere.
