Saab T-stats are tricky - first, they are a 3-stage design, and second, the 9000 system is self-bleeding, and the bleeding is done by the hole in the T-stat (always mount UP).
Once (exactly once) I tried a non-OEM thermostat, and it failed (stuck open) within a week. Don't remember if it was Wahler, and any part may fail, even an OEM part. But the price difference between the Saab and others isn't that big - the big effort is replacing it. Since it's a job I dislike doing once, much less twice, I just buy the Saab OEM thermostat. A failed thermostat can destroy your engine quickly if it sticks closed.
I look for reasonable deals on most parts, but I never skimp on two things - thermostats (always Saab) and spark plugs (NGK). It's worked for me.
Good luck!
