The air entering the engine will be denser (as if you had a better intercooler), so although the upper limit on your boost should be the same, you will bet getting more air for the same boost pressure (and you will probably spool up faster).
The open filter is probably helping to keep the inlet air temperature down, too.
The O2 sensor is probably fine and is *less* likely to give problems in warmer weather because it needs to reach a minimum working temperature for correct operation. During the type od driving you are describing (full throttle), the O2 sensor plays very little part.
If the steering feels a bit frightening while accelerating hard (or even a bit "floaty" at speed), you might consider replacing the lower control arm rear bushes. They're cheap and quite easy to do. Replace them with poly, if you have the budget. I have done on my '96 Aero, and I experience zero torque steer. I can hold the steering wheel between finger and thumb of one hand at full throttle in 2nd gear. (OK, I have the Abbott suspension kit, too, but I don't believe that has any effect on torque steer).
Even fitting new OEM rubber bushes, though, at about £10 (US$15) each, I found a huge difference. My SuperFlex poly bushes were only slightly more expensive than OEM rubber ones, but require a bit more work to fit than the super-expensive Abbott ones.
