Sounds like the Lambda system may not be operating. Do you hear the buzzing of the modulating valve when the engine is running? If Lambda is operating, then disconnecting the O2 sensor will force it to a "center" value. At that point, everything else should basically work fine as long as the fuel pressures are good and the mixture is set (and ignition timing including vacuum advance is all working properly). Even if it is not working, the Control Pressure Regulator/Warm-up Regulator will still make the engine richer when it is cold, so that could explain what you are seeing there. If Lambda is not working, you are in a "limp" mode which sounds like the symptoms you are seeing. If all else is working well, new O2 sensors are fairly cheap at this point - they don't last very long in this application, I replace mine fairly frequently. Be very careful running your engine lean, especially under boost! Things get hot in a hurry....
