The head gasket is fairly straightforward. The main concern I would have is that head gasket failures are not common, especially on non-turbo and if they occur often result from a lot of corrosion of the aluminum sealing surface on the head. So if that's the case you might have to have the head resurfaced to get a new gasket to seal. The second, and maybe worse, issue is that the heads tend to corrode from the cooling passages outward into the #2 and/or #3 intake ports which then lets coolant run into the cylinders. If that is the problem, then you would either need to find a replacement cylinder head or find a machine shop that can pressure-test the head to find the leak (sounds like if that's the issue it would be in the #2 intake ports somewhere) and then weld it up. It would probably still be wise to have the head resurfaced. I'd suggest checking your valve clearances before you take the head off, if you need a valve job might as well do it all at once!
That was probably not the answer you were hoping for, but hopefully it's helpful. I do recommend that you remove the intake manifold first rather than trying to keep it on the cylinder head when you pull the head off. You'll need to remove the manifolds anyway as you will almost certainly need some sort of machine work, and it will make everything much easier to handle if they are not attached to the head.
