Normally the temperature gauge will rise until the thermostat opens and then it will drop again because cold water from the radiator comes into the engine. Eventually it all smooths out and should stay steady around "N". So the overall behavior seems normal, but usually it does not go up to red before the thermostat opens so I wonder if the thermostat is sticking or opening late for some reason. I would also make sure that there's no air in the system - open the heater valve and then open the bleeder screw (heater valve outlet on the air box). It's possible that the heater valve is stuck and trapping some air.
