In my experience, a leaking head gasket will cause bubbles in the overflow bottle. The compression from the engine will pump air (gas or exhaust) into the cooling system and bubble out to the overflow bottle. It generally left a dark oil film in the overflow bottle. Watch the bottle with the engine running hot.
Have you checked the suction hose from the radiator to the water pump? If it is soft it can collapse when hot and your engine is then starved for water.
