Pretty straight forward, but some of the plastic pieces (dash end caps, in particular) may crumble when you remove them. Here's the process, as well as I can remember:
Disconnect the battery.
Remove the radio, and glove compartment cardboard
Open both doors, and remove the four bolts (two on each side) that hold the dash to the the side dash brackets. You can see these bolts when you open the doors, and look at the ends of the dash. The one bolt will be partially covered by the door's weatherstripping. You will have to access the bolts from under the dash. Be carful removing the dash caps.
Crawl under the dash, and look up. At about the middle of the dash, you will see a bracket. You will have to unbolt the bracket from the dash.
Remove any ventilation tubing from the defrosters, vents etc. These will probably fall apart in your hands, mine did.
Now comes the fun part. Go to the store, and buy some white medical tape, and a fine tip permanant marker. Start removing the wires from the gauges dashlights, and alt/brake lights, etc. You have to be careful, some of these pieces such as idiot lights made out of plastic pieces will be brittle with age, and you will break some of them. Double check, and label all wires that you remove. Double check your work, and work slow. My 1967 had no electrical problems until I removed the dash. I crossed one wire, and have yet to track down the wire.
Unscrew the speedo cable.
CARFULLY remove the dash, paying attention to any wires you may have missed. If all you want to do is get the dash pad off, you don't need to remove the dash, just drop the dash.
