Well I can't really diagnose it at this distance, but if it is correctly assembled, seals pointing the right direction and all (I assume you have a Haynes manual or similar with pictures?), and the piston is truly getting cockeyed and binding, I can only imagine it has been honed well beyond proper limits. I haver never seen a piston binding in that way and think it would be quite unusual, but there's a first time for everything. If memory serves piston-to-bore clearance should not exceed about .005", this is easily measured with a dial caliper. I am pretty sure a 99 cylinder is different. I have always been able to get clutch hydraulic kits and complete Fichtel and Sachs clutch assemblies from Jordan's Imported Parts 1-800-222-5764; can't imagine a good reason to use a used pressure plate. For used parts Rick Woolfe 541-726-0664 has plenty of everything.
