HooHah, too many questions all at once, but good ones.
"I have access to a 1970 Saab wagon. Its basically my Dad's but has not been run for years. It sits at his property, unfortunately outside. California weather tho, so now snow on it during the winter. It ran when it was parked but has not been started for years.

No. In monetary terms there is no way you will come out ahead or even or anywhere near even.
Yes. In satisfaction terms if you have the resources and skills you may end up with a decent car. Are you willing to invest US$5000.00 to restore this hulk? Not counting your personal time of course. The number might be only $2000.00 or it might be $10,000 or more, depending on the degree of restoration.
After spending some amount of money, anywhere in the range mentioned, can you sell the car for that amount?

Anything particular I should look at when I go check it out? I'm sure it still has oil and gas in it. I figure I'd change the fluids and put in a new battery before attempting to start it.

Depends on what you mean by "readily." The frank answer is yes for some, no for others. What parts do you need? How do you define "readily"? Any particular part you need can be had, but some may take hours and hours of effort to procure.

Possibly you should pass the project on to someone who wants to handle the problems. The problems can be substantial in time, effort, money, expertise, connections, etcetcetc. Parts support is substantial but requires effort (time, effort, money, expertise, connections, etcetc)
so the real question is up to you, how badly do you want to pursue this project.
