If you adjust the slave in to far (or shim it too much), you can have the release bearing fork contact the clutch pressure plate. That happens as you push the clutch all the way in, at max travel.
You described the problem as "when you come off the clutch pedal"- which I assume means when the clutch is engaging. There are several things that it could be- the clutch components themselves, the transmission, the freewheel, or possibly the CV joints. I've had problems with ALL of them at one time or another.
The only thing I would describe as a "grind" is when the transmission won't go into gear (misadjusted shifter, bad sychro's, or not enough travel in the clutch).
