Hot temp- what do you have in there for a thermostat? I run a 180 in two of my VSaabs and a 160 in another which has a hypo motor. You should see your temp gauge move up, peak out and then settle into a pretty constant temp if your thermostat is working properly and your cooling system is functioning normally. Jumpy temp gauges can mean air in the system- the VSaabs have a bleed valve for this purpose. Make sure you turn the heater to high to properly bleed it. Another source of coolant problems is the waterpump backing plate. It can get very worn and even with a new pump, water flow can be greatly diminished.
Smoke means you are burning oil. Do a compression test- first dry then wet and see what you get. If you milled the heads down, your compression should be on the high side and I would venture to guess you should push 150 psi on compression. Did you replace the valve stem seals? They can cause oil to leak down the valve stem if bad and is particularly noticable on startup.
