Could it be a simple as air trapped in the cooling system? The Sonett has a bleed valve on the firewall to aide in expelling air when the system is serviced. I am looking into buying a modern designed "Fail-safe" brand thermostat which is engineered to stay open should it fail at high operating temperatures. I believe I had the same problem with trapped air and a wandering temp reading.
