I think that's pretty good for oil pressure. One of my Sonett's has a similar upgraded engine and read's almost exactly that level at idle and at speed.
My '68 Deluxe, on the other hand, is much less. I might see 40 PSI at speed and less than half that at idle. I was at a Saab gathering a few years ago and was sitting with Saab guru John Moss and asked him about the low pressure. His response was "you have positive pressure- what are you worried about? If you start burning oil or if the balance shaft gets loose, then deal with it. If it bothers you, take out the oil pressure gauge." It still bothers me, but I haven't taken out the gauge or done anything to the motor. It runs great, is quiet, and doesn't burn any oil.
The other rule of thumb that you often hear is "10 PSI per 1000 RPM". So at idle, round it up to 1000 RPM and you need 10 PSI. At 5000 RPM, you need 50 PSI. Your car seems to meet that rule of thumb at speed right on the money.
