Thanks Eric for reading my long post and providing some information. I can confirm that I had the water pump was in good shape and had the curved vanes with no deterioration shown. I had sourced a used original water pump but vanes on that one were worn down somewhat so I went with the aftermarket one. I did take the radiator to a shop who tested it for flow and leaks and there were no issues with the radiator.
Since I have owned the car I haven't left my town with it. At first it was stalling due to a poor fuel pump that was mounted to high in the engine bay. The saabnet board set me straight on that and I properly installed the pump under the rear seat. Once that was working properly and the stalling went away I went through a couple of fuel pressure regulators before landing on the one that is currently installed and it keeps the weber at the correct pressure and seems fine. Then I tried making trips to my office which is only 5 miles away and noticed the temp gauge was in the red. That's when I started all of the investigation and fixes to isolate this issue. My sense is that it has had the overheating issue the whole time. When the temp gauge is reading red/pinned there is steam and pressure sounds in the radiator area.
I have sourced a external temp gauge and will add that to the system when I can work on it next. I will confirm the top hose temp test as you described and see what I find. I recall grabbing that top hose before when diagnosing this problem and felling pressure of fluid in there when i squeezed it. Now that was before i took off the water pump and pulled the thermostat again.
What pressure rating should my radiator cap be for this system?
