1) If you want to keep the stock manifold, the only readily available options are the FoMooCo, the Weber 34ICH, and the single-barrel Solex carb that came on earlier V4s. The big disadvantage of both the FooCoMo and the Solex are that they're only available used and rebuild parts are hard to find. The Weber and support materials can be bought new. Also, all the Solexes have a throttle shaft that turns the opposite way of your MooCowFo or Weber, so the throttle linkage has to be modified to use a Solex.

If you're willing to scare up & pay for a 2-barrel manifold, you can use a current Weber 32/36, the US-made clone Holley-Weber 5200, the 2bbl Solex 34/34PSIT that was used on late Euro V4s, and various other things. Again, only the current-model Weber is available new.

Motor Sport Services of Jamestown NY offers a performance-oriented 1-bbl carb that fits on a specially modified manifold you also can get from MSS.

If you've really got scads of money to spend, you can try to track down the dual sidedraft Weber/crossram manifold package (aka "moose horns") that used to be sold through the Saab Sport and Rally catalog and was used on the 160hp factory rally engines. This also requires a special distributor, throttle linkage, etc.

2) Current Webers should be good (for a while they seemed to be turning out some leaky ones.) Big advantage of a Weber is that you can change lots of internal jets and tubes, so if you've got a modified engine it's easy to tweak the carb for best performance.

4) I'd rather have a manual choke -- less to go wrong and simplifies the engine-bay plumbing because you don't need to run a water line to the choke heater. If your current MoMoCoMoBananaFanaFoCo is okay other than the choke being gone, you can get a generic "manual choke conversion kit" from any auto parts store that should fit fine and will let you operate the choke via a cable.
