This problem is strange and I can't really help... sorry. There are some thoughts in the linked post below but your issues are much more severe.
If you're pretty sure you want to dig into the electrical system, I would suggest replacing the spark plugs and spark plug wires first. How many miles do they have? The V6 has a coilpack but if you search the archives, you'll find a post by Anders or SWEDECAR saying that he'd never seen one go back (as of that post). Pretty expensive to replace without knowing for certain.
You are not quite getting the classic ignition switch symptoms since it hesitates but does not die until you come to a stop. That seems more idle related. (The ignition switch usually but not always causes warning lights and usually causes the engine to die without warning at any time including start up.)
It almost sounds more a severe vacuum leak for the engine to die like that. I know on my old C900 that there was one vac hose that would cause the car to run like hell and die at idle if it came disconnected, which it did several times. Make sure all vacuum hoses of all sizes connected, such as hoses into air mass meter and intake.
Other thoughts: fuel pressure regulator (since you were messing with the fuel system) and run a bottle of Techron concentrate.
The valve cover gaskets should be totally unrelated to any stalling behavior. The only reason to replace them is because they are causing an oil leak.
