The fluid level goes up as the new thick pads have the pistons pushed in. That is normal. Changing the pads or pads and rotors does not require that the hydraulic lines be opened up. So there is no routinge need to bleed the brake fluid for this kind of work. And many have tried to deal with the spongy feel of new brakes by bleeding and it is of no avail.
The friction surface of new pads is a bit spongy and this will consolodate and will eliminate much of that feeling. And when new pads are installed, they need to wear into the shape of the old rotors. That takes some time and the feeling will improve as that happens. So much of what you report sounds very normal.
The squeaking can also be from the pads not been bedded into the rotor. Do the new pads have shims? The orignal shims do rust away. Sometimes you can get stick-on shims tht work well when the orignal sheet style shims are hard to locate.
