The sensor issue described by Tom is a possibility.....Here's another possibility: My 98 SE Turbo kept giving me the "low coolant" display even though the resevior was full. It turned out to be due to the water pump, which was starting to fail. There was no leak to cause fluid to drain while the car was parked, however, when the engine and water pump were running, some fluid was leaking out of the pump...check the pump for any signs of leaking (it will be obvious even if not running when you inspect it).
