If you've been using non-synthetic to this point (and it sounds like you have), I recommend using a good engine flush, such as made by AMSOIL or BG, before changing. If you are willing to wait 1500 miles or so before changing, you might try an Auto-Rx treatment.
If you don't, or won't, flush, go ahead and change to the synthetic, preferably PAO based. Then watch the level. If you see a sudden increase in consumption, change the oil filter and top off. If the oil gets nasty looking, you might want to drop the first batch after 4-5,000 miles.
I'm sold on AMSOIL and have been for over 25 years. If I couldn't, or wouldn't, use AMSOIL, then I'd probably go with the new Mobil 1.
In any event, there is no benefit to using anything more viscous than an xW-30. That will give you all the protection you need. Anything heavier will have more internal drag and might cost a bit in performance and/or mileage.
