Hello Nick,
I have done this more times than I can remember on my 94 SE. I drive the car up on ramps, remove the passengers side under car plastic panel at the front of the engine compartment, place a short piece of duct tape on the subframe downhill of the lower hose where it mounts to the radiator flange (acts as a flow diverter). I place a large diameter (18") plastic pan with a built in pour spout underneath and loosen (do not fully remove) the hose at the radiator. I have not spilled a drop yet.
With the pan with the spout you can easily fill the empty coolant containers so you can take them to a collection center, again without spilling a drop. Rinse the pan out with water when done to keep pets, kids and gunk out of it.
